That's So Sweet Cheesecake Bakery was established in 2011 in Lexington, Illinois. This original store is owned and operated by Lindsay Bachman. She decided she wanted to open a bakery after making a cheesecake for a family gathering. Her family loved the treat, and it became a tradition for her to bring a cheesecake to any and all gatherings. She began to tweak recipes and provide different, and unusual, flavors. After awhile, Bachman realized she had a business opportunity. She began selling full sized cheesecakes out of her home. After awhile, she added 4 inch and 6 inch cheesecakes to her menu. Two years after that first fateful cheesecake, Bachman decided it was time to take the business to the next level. She thought up a name, bought a store, and began to mass produce several flavors of cheesecakes. Soon after opening, she added the business' most popular item- Minis. These bite size cheesecakes are the perfect serving size. Lindsay quickly realized she could not possibly do everything herself. She hired a full time baker, and soon after,  a part time baker.

    After two years, business was booming, and Lindsay Bachman decided it was time to expand. On October 22, 2013, she officially opened her second store in Uptown Normal. This store is simply a storefront- Baking for both stores is done in Lexington. Every day hundreds of miniature cheesecakes are baked, prepared, and decorated in Lexington, then driven down to Normal. The only size of cake that is able to be bought in store is the miniatures. If someone desired a four, six, or nine inch cheesecake, they would have to call the store they desired to pick it up from, and place an order. Orders must be placed before noon the day before pickup- any time after noon, and it would not be possible to have your desired treat. Of course, if a customer were to completely forget to place an order, both the Lexington and Normal store have several flavors of minis in store, every day.

    That's So Sweet receives a large amount of their business from weddings. Each "Wedding Season" (which spans from early March to late July) anywhere from one to three weddings a weekend. The heaviest part of Wedding Season would be in the spring- This is when the business supplies treats for three or more weddings each weekend. A wedding does not have to be in the before mentioned months to have That's So Sweet cheesecakes, this is just when the business is busiest. The process for setting up a wedding order is simple. Someone would call one of the stores (phone numbers below) and ask to speak to Lindsay to set up a tasting. The bride and groom would sample a few flavors at the tasting, and contact the business when they made their decision. They would also have to decide how many of each flavor they desired. Usually, the owner suggests purchasing one and a half mini's per person. One mini is usually not enough, and two usually results in a lot of leftovers. Many brides and grooms decide to have larger cheesecakes for themselves, the bridesmaids, and the groomsmen. However, mini's are most popular for guests. 

    Each month, a new flavor is debuted. By joining the "Cheesecake of the Month Club", someone can purchase the rights to be one of the first to try the newest flavors. Joining is free and easy- Simply ask a clerk to be added to the list, and provide your email address. Each month the customers receive an email describing the newest flavor. If they decided it sounds delicious, they respond to the email saying they would like to try it. If not, they simply don't respond. It costs $12 a month, which is the normal cost of a 4 inch cheesecake.

Individual minis cost $2, or three for $5.

A 4" costs $12.

A 6" costs between $20-$25, depending on the flavor.

A $9 costs between $35-$40, also depending on the flavor. 

Parking is available at both locations on the street. 

The Uptown Normal store is located at 102 W. North Street, Normal, Illinois 61761.

The Lexington store is located at 429 W. Main Street, Lexington, Illinois 61753.

 

Both stores provide a variety of flavors daily, and the menu changes every day. However, many of the flavors are very popular, and are therefore in store almost daily. These flavors include White Chocolate Raspberry, Andes Mint, and Chocolate Covered Strawberry. For a full list of flavors, a customer can call the Lexington store at 309-490-1016. Or they could call the Uptown Normal store at 309-808-4504. Typically, it would be best to contact whichever store the customer would prefer to visit.
