Boise is the alleged home of the finger steak.   A regional specialty dating back to 1954, finger steaks are pieces of deep-fried battered steak.   Many restaurants use choice cuts of meat such as ribeye, New York strip, and tenderloin.   Milo Bybee's Torch Lounge is locally credited as being the first establishment to have placed finger steaks as a menu item.   Chef Lou owner of the Westside Drive-in said to Guy Fieri that "finger steaks are on four out'a five menus in Boise".  There are blogs in the Statesman discussing the original Milo's finger steak recipe and there are several variations however recipes such as the one below are accepted locally.   Today instead of a cafe the Torch Lounge is a bikini bar.   Don't try ordering finger steaks because you probably will not receive what you thought your had ordered.   I'd suggest Chef Lou's Westside Drive-Inn.    

"This recipe was given to me many years ago and is alleged to be the original recipe from the Torch Cafe in Boise, Idaho: the purported home of the finger steak. I ate there many times in the 70's and this recipe seems authentic. I always omit the salt as it seems way too salty for me and everyone to whom I passed it along agrees with me, but I included it as that's the way it was given to me. Alleged Original Milo's Torch & Lounge Cafe Finger Steak Recipe 

  • 1 1/2 cups milk
  • 1 teaspoon dried thyme
  • 1 teaspoon dried marjoram
  • 1 teaspoon salt
  • 2 tablespoons seasoned salt
  • 3/4 tablespoon Worcestershire sauce
  • 2 1/2 cups flour
  • 4 cups oil for deep frying
  • 3 pounds beef tenderloin, cut into 2 1/2x3/4-inch strips
