Elizabeth Applegate is a Senior Lecturer in the Nutrition department at UC Davis and is known for teaching the classic course Nutrition 10. She has a Ph.D. from UC Davis.

She is a nutrition consultant for the U.S. Olympic teams as well as members and teams in the NBA and NFL, such as the Oakland Raiders (2005 team nutritionist).

She is a fellow of the American College of Sports Medicine, on the Board of Directors for the American Council on Exercise, and is member of the Sports Cardiovascular and Wellness Nutritionists. She has been been featured on a ton of radio and television shows, such as Good Morning America, CNN, ABCNews, Mythbusters, and ESPN, as well as print media such as USA Today, The LA Times, and The Washington Post.

She is the author of five nutrition books: Bounce Your Body Beautiful, Encyclopedia of Sports and Fitness Nutrition, Eat Smart Play Hard, Eat Your Way to a Healthy Heart: Chocolate and 99 Other Foods to Help Your Heart, and Power Foods: High-Performance Nutrition for High-Performance People.

She is also the author of the "How to Survive If You Have Excessive Gas" section of the Worst-Case Scenario Survival Handbook: Dating and Sex. She loves fitness balls, chocolate, and Spongebob Squarepants.
