Interview with the owner and head chef of American Harvest Eatery, Jordan Coffey:

Q: What makes you stand out from other restaurants in the area?

Most of west Springfield is corporate restaurants, whereas American Harvest is locally owned. American Harvest is very chef-driven and ingredients-focused instead of broad American food as a whole. We buy as much local produce as possible, making our menu seasonal. Everything except our bread is made fresh daily and is never frozen.

Q: What is the general community reception of your restaurant?

Our complaints don't differ from other restaurants, but we are very well-received in the community. We originally opened with the Springfield market in mind with an aim to increase quality with time. We've evolved a lot since first opening and have received a very high percentage of positive reviews since. Most of our complaints come from people not quite understanding the idea of a seasonal menu, where tomatoes are only served during the summer months when they are in season, etc.

Q: What keeps people coming back?

We set ourselves apart with our quality of food. Our service or food may not be perfect, but they're still great. Our uniqueness of food and level of service give people a reason to come back. We have a core group of five or six servers who have worked here since opening out of about ten to twelve servers. Our loyal staff also begets us a loyal clientele that will even ask for specific staff during visits. Lastly, we have an extensive cocktail and wine list that rotates seasonally that gives an incentive to come year round.
